Yes, you can go into the seating plan and modify it by changing the character to any one of the other available characters.
Then, update all charts based on that plan. This will not overwrite sales made to shows using this plan as the basis for their chart.
The only time the sales get overwritten is if you put a new chart in place of the existing one, which overwrites it.
